Mojito (IBA)
Method :
Rip the mint leaves and run them around the rim before dropping them in the empty glass . Lightly muddle the mint by pressing it with the flat end of a bar spoon . Half fill the glass with crushed ice . Add the rum , lime juice and sugar syrup . Churn . Fill with crushed ice and top with a tiny dash of soda water .
Ingredients :
40 mls : White rum
30 mls : Freshly squeezed lime juice
2.0 brs : Sugar
6 pcs : Mint leaves
0 tpw : Soda water

The Mojito is one of our favourite refreshing summertime drinks. Like many other cocktails the quality of ingredients you use can make a huge difference in taste. Try experimenting with different rums and sugars to find the mix that fits your taste the best.
1. Add 8-10 mint leaves and syrup to a chilled mixing glass. It's important to gently muddle the mint leaves so you don't bruise them.
2. Add lime juice, rum and stir.
3. Next add crushed ice and soda water.
4. Stir gently until all ingredients are combined.
5. Top it off with a little more soda water if needed.
Enjoy your Mojito!
If you want to add a little extra aroma of mint you can gently rub a mint leaf around the rim of the glass.
There are a couple ways to garnish a Mojito. Add a half lime (from the juice) with the ice before stirring, and/or sprig of mint leaves. Do not use an over crushed piece of lime because the oil from the skin can be bitter in taste and change the sweetness of the drink. The use of limes in the is more traditional mojito recipe.
As drunk by James Bond in the film "Die Another Day". Soda water is really an option, so don't add more than a shot or the drink tastes watery.
Mojitos were probably originally made with light rum, but golden or dark rum improves them immensely.Popular modern variations are the Champagne Mojito (topping the drink with champagne instead of soda), and the Ginger Mojito (muddling some fresh root ginger with the ingredients).
